    Any really great math-themed fiction?

Science fiction makes science and it's applications fun to read about. Arthur C Clarke is one of my favourites. ("Hard SF")

What about math-fiction? Anything really good?

No, I don't mean the fairy tale math help books (They're great though!)

The Society of Actuaries occasionally sponsors a contest called "Actuarial Speculative Fiction". You may find some of the short stories interesting.
