    What am I doing wrong with $\Epsilon$?

    use \sum

    $\sum$

    yes, \Epsilon should work too but oh well.

    Sime implementations of TeX don't bother with uppercase (or even lowercase) Greek if they match the Roman versions. $\sum$ is not upppercase epsilon anyway, it's uppercase Sigma: $\Sigma$.

    $\epsilon$

    Don't use the capital E.

    This particular implementation of Latex does not have a "capital epsilon" perhaps because it is identical to the Roman "E":
    $E$.
