For one thing, |x- y| is never negative while |x|- |y| may be negative. Take, for example, x= 3, y= 5.

|3 - 5| = |-2| = 2

|3| - |5|

3 - 5 = -2

2 DOES NOT EQUAL -2.

Two different expressions.
