The answer is factor, factor, factor!
    25 - x^2 = 5^2 - x^2 is the difference between two squares, so
    25 - x^2 = (5 + x)(5 - x)

    25 + 5x = 5(5 + x)

    So....
    \frac{25 - x^2}{25 + 5x} = \frac{(5 + x)(5 - x)}{5(5 + x)} = \frac{5 - x}{5}; x \neq -5
