The field produced by the current in the coil produces a magnetic field, which
then interacts with that from the static permanent magnet/s resulting in a
turning moment on the coil which turns until the torque from the magnetic
fields is matched by that from the springs or torsion in the suspension system.

I will add to this (very nice) description only one small thing: The grand-daddy of all these devices is the galvanometer. If you can understand a galvanometer, you will understand all of them.
