what makes you think there would be such a connection?... I mean, would you have been equally likely to wonder if there is a connection between Bessel functions and algebraic geometry, or do you have a specific example that suggests (necessarily in a very special situation) that such a connection appears in your case?
For connections between Riemann's Zeta function and probability (especially large random matrices), the following survey by Ph. Biane may interest you (in particular if you can read French... otherwise, you can look at the equations and references...)
